75% Cabernet Sauvignon, 12% Merlot, 6% Malbec, 5% Petit Verdot, 2% Cabernet Franc
The nose sparks with baked black cherry, dried blackcurrant and plum pith that lead with savory crushed cardamom and green tobacco leaf. Polished tannin and soft acidity bathe the palate while slowly unveiling essence of purple flowers and cranberry tart that hint of pomegranate balsamic reduction. The finish closes with toasted hazelnut, blackberry cobbler and nuances of Cherries Jubilee.
Cabernet Sauvignon comprises the largest planted acreage at Cass, thus we have the ability to choose fruit from a variety of sites, soils, and clones across the vineyard. Picked in early September, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction, which was necessary to match the ripe flavors of the vintage. Aged for 22 months in French oak.
