![]() As with all of our red wines, we fermented in open top bins, punching it down twice per day and pumping over up to 5 times per day to extract maximum flavors and color. The wine was barrel aged 16 months. The resulting wine is round and supple with bacon & cherry notes. Drink this wine with Pan Fried Veal Chops with Lemon and Rosemary, grilled Lamb Chops with Provencal Dressing, or grilled Chorizos with Salsa. Soil Type: San Ysidro, Zaca
