2007 Cabernet Sauvignon

2007 Cabernet Sauvignon

Cabernet Sauvignon clone 337 is a favorite on the central coast for its deep pigmentation and full bodied wines.  Clone 4 is a popular Napa Cabernet clone that we grow in Paso Robles, with small clusters and small berries. Clone 8 adds deep cherry notes and big body.  Fermentation was completed in 5 ton open top fermenters which were punched down by hand twice per day and pumped over 1-5 times per day until fully dry.  We barrel aged this wine for 19 months.  Drink this wine with  Standing Rib Roast of Beef,  Crusty pan seared Rib-eye steak, or Glazed Beef with Bourbon-Roquefort sauce.

Detailed Wine Information

Alcohol:15.6%
Appellation:Paso Robles
Sub-Appellation:Paso Robles
Varietal:Cabernet Sauvignon
Vineyard Notes:The Rhone varieties in our Estate Vineyard are 100% ENTAV certified clones, planted in 2001. In total, there are 12 varieties planted on 160 acres of alluvial soils alongside the Huer Huero River. We are located southeast of Paso Robles in an area now being called the "Templeton Gap." The vineyard is at 900 feet elevation on a relatively flat terrain, surrounded by hills up to 1400 feet in elevation. This valley is known as a cold spot in the area, which is helpful in stretching out the ripening time for the fruit during harvest. The soils have good water holding capacity, which is also a big help during some of the long hot days we experience east of Paso Robles.
